This year for Easter we stayed close to home. Ray was working and Austin had a few tests we needed to have completed to make sure he's healthy. He's been having some trouble since the pneumonia, but he's doing well.
The Easter Bunny arrived with the usual assortment of chocolate bunnies, tootsie rolls, starburst jelly beans and books...yes folks, books! The kids also got lacrosse sticks, which they will need a lot of practice with, and ARE NOT allowed to play with IN the house (ask Timmy, his went into "time out" after only a few hours!). The kids also had an egg hunt-more like a race!
On a side note-I couldn't find ANY peanut butter eggs.......anywhere! What is Easter without them? So I found an easy recipe for peanut butter eggs- just icing, peanut butter, some mixing & shaping(mine looked like a blob-who cares!), freeze overnight and drizzle with melted chocolate the next day. I used chocolate icing (they recommend vanilla, but we had chocolate whipped icing in the pantry and when will I ever use it?). I also put mine into cupcake liners (Disney Cars-'cause that's what I had in the pantry-yet again!) Well........they came out GREAT! Tasted just like the kind you buy......maybe even better! Sorry no pics of these-they came out like a blob, remember?
